Mediterranean climate with Atlantic influence, with an extreme difference between summer and winter.
Precipitation: 400 liters.
Manual harvest in 15 kg boxes. The grapes are destemmed and processed in stainless steel tanks where they remain for approximately 10 days after finishing alcoholic fermentation, thus achieving greater extraction of color and more complex and tannic wines, optimal for long aging. It undergoes malolactic fermentation in barrels and ages in new French oak barrels of extra fine grain for 14 months. Its aging is completed in the bottle.
Characteristic reddish color similar to cherry and very luminous. Its intense and complex aroma from its excellent aging is reminiscent of spices and berries. In the mouth, fruity nuances are appreciated with an elegant, tasty and long finish typical of a great wine.
A wine with great personality to accompany meats in sauce or stewed meats, sirloin steak, steak, fish such as cod, salmon or tuna and strong cheeses such as Idiazabal, Cabrales or Manchego.
One evening back in 2009, as the last rays of sunlight embraced the ripe grapes in the vineyard, Ana and Jose Antonio Gómez de Segura took the decision to produce this special wine, in view of the exclusive character of these grapes compared to the rest.
